This is probably the dish I made most in the last few years. I got the recipe a few years ago from my mum-in-law as this is one of my husband's favourite. It is easy to make and freeze well, too. I like to keep a few different dishes in the freezer and they become handy especially for those days when I don't feel like cooking or baking in the kitchen - and Beef Cannelloni is usually one of them.
Ingredients
9 pieces Cannelloni shells
275 gr minced steak
1/4 cup breadcrumbs (plain)
1 small onion, chopped
1 tablespoons grated parmesan cheese
1 egg
1 teaspoon chopped parsley
1/4 teaspoon oregano
1/4 teaspoon basil
Salt and pepper
Method
Combine minced steak, breadcrumbs, onion, parmesan, egg, parsley, oregano and basil. Season with salt and freshly ground pepper. Fill Cannelloni shells with meat mixture. Place in a single layer on a buttered casserole.
Sauce
1 tablespoons oil
1 small onion, chopped
1–2 rashers of bacon
1/4 teaspoon oregano
1/4 teaspoon basil
120 gr can Tomato Paste
1 cups water
1/4 cup grated parmesan
Melt butter and fry onion until tender. Fry bacon. Add oregano, basil, tomato paste and water. Season with salt and pepper. Bring to boil and pour over Cannelloni. Top with grated parmesan and bake at 180ºC (350ºF) for 35 minutes.
Serve with bread or potato with carrot, broccoli, and/or peas.
It is also good to put a piece of cannelloni and lettuce in a hot dog bun. Yumm!
Often I make these Beef Cannelloni and freeze them. Very handy!
